Noble Coyote Espadín is a joven mezcal from the central valley of Oaxaca in Mexico, bottled at 43% vol. It is made from Espadín agave (Agave angustifolia), grown for about seven years at San Pablo Villa de Mitla.
The agave hearts are cooked in traditional earth ovens and crushed by hand with mallets. Fermentation takes place in Mesquite vats, followed by double distillation in copper stills.
The nose is fresh and vegetal, with anise and a subtle touch of smoke. The palate is lively and herbaceous, leading to a persistent finish that is lightly saline and smoky.
