Noilly Prat is a French vermouth first made by Joseph Noilly in 1813, in a 70cl bottle at 18% ABV. It is built on Picpoul (60%) and Clairette (40%) wines, aged in oak barrels in the open air, exposed to wind, rain, sun and sea spray. The method goes back to Louis Noilly, who wanted to recreate the conditions wines met on board sailing ships.
The aged wines are blended with sweet muscat mistelle and a raspberry and lemon-infused distillate. A blend of 20 botanicals, including Roman chamomile, yellow gentian, nutmeg and bitter orange, is added by hand each day during a three-week maceration. After filtration the wine rests for six weeks or more before bottling.
