Nove Lune Theia Passito (37.5cl)

Theia is an organic passito from Nove Lune, an estate in the province of Bergamo, Lombardy, in a 37.5cl bottle. It is made from Helios (40%), Solaris (40%) and Bronner (20%), grown organically. The grapes are picked by hand and dried for about three months. Fermentation takes place in stainless steel at around 17°C to keep freshness and aroma, and after gentle pressing the wine spends several months in very small French oak barrels. The nose offers apricot, date, peach and dried fig, with light notes of chestnut, hazelnut and honey. The palate is balanced, fresh and saline, and the finish is very long and balsamic.
