Octomore 16.3 is a five-year-old single malt from Bruichladdich on Islay, the sixteenth release in the heavily peated Octomore series. It was matured entirely on the island in a combination of Bourbon, Sauternes and Pedro Ximénez casks, and is bottled at 61.6% vol with a phenol level of 189.5 PPM. It is non-chill-filtered and has no added colouring.
The barley is 100% Islay-grown, from Church Field on Octomore Farm, two miles from the distillery.
The nose is toasted grain, sweet malt sugar and ashy peat smoke with salty notes. On the palate come smouldering peat, oak, dried fruit and honeyed malt. The finish is earthy smoke and malted barley, with salted almonds.
