Ohishi – 8 Year Old Sherry Cask Japanese Whisky

This is an 8 year old Japanese whisky from Ohishi, matured in sherry casks. The distillery has worked since 1872 in the village of Mizukami in Kumamoto prefecture, on Kyushu, Japan's southernmost island. Fewer than 3000 people live there. The whisky is made from rice grown on local farms, 30% of it from the Ohishi family farm. Mochi, Hinohikari, Gohyakumangoku and Yamadanishiki strains are used, with water from the Kuma River. Fermentation runs for 18 days.
