Old Man Winter Cask Strength Bourbon (59%)

Old Man Winter Cask Strength is a four-grain Kentucky straight bourbon from Preservation Distillery + Farm in Bardstown. It is bottled unfiltered at cask strength, 114 to 118 proof (57 to 59%), in micro-batches of one to three barrels. The blend pairs wheated, pot-distilled bourbon of six years or more with traditional rye bourbon aged ten years. It then goes back into its original barrels for more than a year of further ageing. The whiskeys in the batches range from 7 to 11 years old. The mouthfeel is velvety, with dark chocolate, ripe blueberry compote and deep caramelised sugar on the palate. The finish is long and warming, with toasted oak and winter spice.
