This is a single barrel straight rye from the James E. Pepper Distillery in Lexington, Kentucky, in a 75cl bottle. Each barrel is bottled at its natural strength, so the proof differs from one barrel to the next. The mash bill is 95% rye and 5% malted barley, and the whiskey is aged four years in new toasted and charred Kentucky oak.
The nose is fresh dill and mint with anise, baking spice and butterscotch. The palate brings rye spice and clove, then cocoa, leather, vanilla toffee and chocolate peppermint. The finish is long and spicy, with oak zest.
