Olmeca Altos Plata (70cl)

Olmeca Altos Plata is a blanco tequila made at the Olmeca distillery in Jalisco, Mexico, from blue Weber agave grown at more than 2,000 metres above sea level on mineral-rich volcanic soils. After cooking, the agave is crushed either with a traditional tahona, a two-tonne wheel press cut by hand from volcanic stone, or with a more modern roller mill. The juice ferments for 36 hours and is distilled twice in copper stills, then bottled straight after distillation. It is herbal and intense, with citrus notes of lime and lemon and a sweet touch of vanilla. It suits cocktails, and can also be drunk neat or over ice.
