Olmeca Altos Reposado (70cl)

Olmeca Altos Reposado is a tequila from the Olmeca distillery in Jalisco, Mexico, a house dating back to 1867. It is made from Weber blue agave, grown at more than 2,000 metres on volcanic, mineral-rich soil. The cooked agave is crushed in two ways: with a traditional two-tonne tahona wheel cut from volcanic stone, and with a modern roller press. The juice ferments for 36 hours, is distilled twice in copper stills, and then rests for six months in American white oak. Herbal notes sit alongside lime, lemon and sweet vanilla. The palate is balanced, and the finish carries agave, citrus acidity and a touch of smoke. It works in cocktails, neat or over ice.
