Oola Waitsburg Bourbon Whiskey (75cl, 47%)

Oola Waitsburg is a 47% bourbon in a 75cl bottle, distilled in a copper pot still at OOLA Distillery in Seattle. The recipe uses four grains: corn, rye, malted barley and white winter wheat. The name honours Waitsburg, Washington, where much of the grain grows. The whiskey starts in small American white oak casks, which see large daily temperature swings, before moving to full-size 53-gallon alligator-char barrels. The nose offers vanilla, caramel, cinnamon, ginger, black peppercorn and baked apple. The palate brings butterscotch, caramel, brown sugar and maple, with savoury hints of olive brine, dill and chutney balanced by cherry and baking spice. The finish is warm and long, with honey, oak and a pepper-cinnamon kick.
