Ostinato Marsala Fine Ambra Secco (50cl, 17%)

Ostinato Marsala Fine Ambra Secco is a dry Sicilian fortified wine at 17%, in a 50cl bottle. It comes from the Alagna family of Baglio Baita Alagna, whose estate is farmed organically. It is made from Grillo, Inzolia and Catarratto from old, low-yielding vines, picked late. The base wine is naturally high in alcohol, so less fortifying spirit is needed. It then ages for more than two years in Slavonian and American oak, double the minimum for the Fine grade. Secco means up to 40 g/L of residual sugar. Dried apricot and toasted hazelnut sit over orange peel and sweet tobacco, with a saline, savoury undertow. It is dry, structured and long.
