Parker's Heritage Collection 11 Years Old Heavy Char is a wheat whiskey from Heaven Hill and the 15th edition of the Parker's Heritage Collection. Following the two previous releases, it explores how barrel char level interacts with different mashbills. It was made from 75 barrels, each charred for one minute and 30 seconds (Level 5) rather than the usual 40 seconds (Level 3). They were filled with Heaven Hill's wheat whiskey mashbill and aged for 11 years on the sixth floor of Rickhouse Y. It was cut to 122 proof (61%) and is non-chill filtered. The heavy char brings a soft, rich sweetness with hints of molasses and butterscotch.
