Parker's Heritage Collection Edition 15: Heavy Char Barrels 11 Year Kentucky Straight Wheat Whiskey (61%)

Parker's Heritage Collection Edition 15 is an 11 year old Kentucky straight wheat whiskey, released in the name of the late Master Distiller Parker Beam. It uses the same mashbill as Bernheim Wheat Whiskey and is bottled without chill filtration at 122 proof. What sets this edition apart is the wood. The whiskey matured in 'Level 5' barrels charred for 90 seconds rather than the traditional 40, which let the spirit move further into the oak. The 75 barrels reached peak maturation on the sixth floor of Rickhouse Y. The heavier char brought forth honey and subtle cinnamon spice.
