Castello Monaci Passito Salento IGT Moscatello Selvatico is a sweet passito wine from Salento, made from Moscato grapes selected for quality and their ability to concentrate sugars and aromas. The grapes are dried before vinification, which aims to preserve aromatic intensity and natural sweetness. It has an intense, bright golden yellow colour. Aromas include exotic fruit, honey, dried apricot, orange blossom and sweet spice. On the palate it is concentrated, with sweetness balanced by fresh acidity, leading to a long, persistent finish with a mineral note. It suits Mediterranean desserts, blue cheeses and foie gras, or slow sipping.
