Pastis 51 (1L, 45%)

Pastis 51 is a French pastis associated with Provence, first made by Pernod in 1951, the year that gives it its name. It comes in a one litre bottle at 45% vol. It is built on an infusion of aniseed, with herbs including marjoram, mint and carob. The colour is amber-yellow and turns milky when water is added, revealing a soft, enveloping body. The palate brings together liquorice and aromatic herbs. It is served diluted, at five parts cold water to one of pastis, with ice, and is also used in cocktails.
