Fortified sweet wine
Antinéa is a sweet Muscat de Rivesaltes vin doux naturel from Paul Herpe et Fils in the Languedoc. The grapes are picked by hand into small crates between 20 August and 30 September. A small share of the Muscat is macerated in alcohol to improve extraction, then added to the rest, which is vinified as a white wine and has its fermentation stopped. It matures in steel and is aged in bottle. The colour is deep straw with golden glints. The nose is intense, with apricot, exotic fruit, candied fruit, citrus and spice. The palate is full and almost creamy in texture, rich with apricot jam and ripe fruit, finishing long on citrus. It pairs with dried-fruit or citrus desserts, blue cheese or foie gras.
