Paul John – Indian Single Malt Pedro Ximenez Select Cask

Paul John Pedro Ximenez Select Cask is an Indian single malt from Goa, dark copper in colour. It was finished in handpicked Pedro Ximenez casks, and its character draws on the dark, intensely sweet Spanish dessert sherry that once filled them. The nose offers fig and apricot with a hint of banana. On the palate come sweet barley, creamy butterscotch, dried fruit and plenty of Christmas cake. The finish is long, with chocolate fudge, orange peel and a suggestion of wine-soaked nuts.
