Paul John – PX Indian Single Malt (48%)

Paul John PX is an unpeated Indian single malt from Goa, finished in PX sherry casks and bottled at 48%. It is not chill-filtered and has no added colour or flavouring. Goa's tropical climate runs all year and speeds up maturation, with around 8% a year lost to evaporation. The distillery also points to the intense character of the barley grown at the foot of the Himalayas. Tasting notes describe marmalade, mocha, stewed plum and peppercorn on the nose, then dried fruits, raisin, apricot, espresso and chocolate on the palate. The finish is lingering, with sherry spice, chocolate and peanuts.
