Paxton Jones Block Shiraz 2018

A red Shiraz from Paxton, grown on the Jones Block vineyard 6.6 km from St Vincent's Gulf at 76-108 metres above sea level. The Shiraz parcel sits at the top of the vineyard, with morning sun and cool evenings on the east-facing side and shade in the morning and full afternoon sun on the west-facing side. The 2018 fermentation used the grapes' own yeasts with twice-daily pump-overs. The wine was aged for 22 months in a combination of French and American barriques, 40% new, then a further 6 months in bottle before release. It is deep purple-red, with concentrated, fruity aromas of blackberry, mulberry, chocolate and a little vanilla. The palate is full and intense, with dark berries, plum and complex spices, finishing with discreet oak and harmony between strength, velour and finesse. It suits duck, grilled veal, lamb, beef and game.
