French oak stave finish
Penelope Architect is a straight bourbon distilled at MGP in Lawrenceburg, Indiana, bottled non-chill filtered at 52% ABV in a 750ml bottle. It is a blend of three mash bills, each made from four grains: 75% corn, 15% wheat, 7% rye and 3% malted barley. It was aged for four to five and a half years in new American oak. The finish uses two styles of French oak staves, low-tannin Delicate and medium-tannin Intense, chosen stave by stave with Tonnellerie Radoux's infrared OakScan process. The nose is candied cream and florals with crème brûlée, butterscotch, maple, vanilla bean and cacao nibs. The palate is sweet vanilla and viscous cream with savoury oak, turning herbal and floral with cinnamon bark. The finish is rich vanilla with long, gentle warmth.
