Perro San Juan Maguey Espadin Mezcal (70cl)

Perro San Juan is a mezcal from Oaxaca, made from the Espadin variety of agave. The agave is cooked slowly in wood-fired underground ovens, which gives a distinctive smokiness, then crushed, fermented naturally with native yeasts and distilled in copper stills. The nose is deeply smoky, with citrus and a touch of green chilli. The palate balances caramel sweetness with marked minerality and delicate spice, leading to a long, complex finish.
