Pierre Chavin Florentina Red Fruits Sparkling

Florentina Red Fruits is a non-alcoholic sparkling drink from Pierre Chavin, made from the concentrated must of several varieties of organically grown grapes from the south of France. The grapes are destemmed, gently crushed and macerated cold at 4°C on their skins for eight hours. They are then pressed and the must is concentrated without fermentation. Natural fruit aromas and a little carbonation are added before bottling, and pasteurisation means no sulphur or preservatives are needed. It is pale pink with small, persistent bubbles. Raspberry, blackberry and blueberry come through on nose and palate, fresh and crisp yet complex, and the finish is delicate and fresh with good minerality.
