Pike Creek 10 Year is a Canadian whisky from the Hiram Walker Distillery in Windsor, Ontario, bottled at 42% in a 750ml bottle.
It is made from a mostly corn mash, double-column distilled, with a little once-distilled rye added. The whisky spends ten years in white oak barrels and is then finished in rum casks. The Windsor warehouses are not climate controlled, and temperatures swing between roughly -35°C and 35°C through the year.
The nose brings dried fruit, caramel, vanilla and toffee, with banana and coconut. On the palate, honeycomb toffee and molasses give way to dark fruit, brown sugar and peppery rye. The finish is long and warming, with sweet spice and drying oak.
