Pinot Bianco - Villa Russiz

The grapes are hand-picked at full ripeness in the coolest morning hours, then softly pressed as whole bunches. The free-run must is transferred to temperature-controlled fermentation tanks, and the wine rests on its fine lees for 8-9 months before bottling. It is straw yellow, with a delicate aroma of white flowers and fruit, notably golden apple. It is suited to simple fish dishes, raw fish starters, shellfish, light soups, risottos and delicate pasta sauces, and is appreciated as an aperitif.
