Plantation Australia 2007 is an aged rum distilled at Beenleigh Artisan Distillers in Eagleby, Queensland. It is the first Australian rum bottled under the Plantation name. Fermentation uses dunder and the uncommon yeast schizosaccharomyces pombe, and the long fermentation gives plenty of flavour. The rum spent 14 years in cask, 13 of them in Australia in ex-bourbon casks and one year in Cognac. It is bottled at 49.3% with no added sugar. Amber in colour, it shows stone fruit, vanilla, coconut and American oak on the nose. The palate offers exotic fruit, cocoa and vanilla.
