PM Spirits Destilado de Agave Espadin (70cl, 61.1%)

PM Spirits Destilado de Agave Espadin is a single-batch agave distillate from Zimatlan de Alvarez, Oaxaca, made by maestro mezcalero Rene Parada Barriga from 100% Espadin agave. It is bottled at 61.1% vol. in a 70cl bottle, at still strength with no water added. The agave is roasted in a conical earthen pit oven, fermented naturally with well water in pine vats and double distilled in a copper pot still. It was made as traditional mezcal is but never certified, so it is labelled destilado de agave. The batch totals 563 litres. The aroma is tropical fruit punch with mild smokiness and ripe agave funk. The texture is oily and satin-like, with mature, complex agave and a surprising softness for the strength. The finish is extremely long.
