Preservation Pot Distilled Rye is a Kentucky rye whiskey made at Preservation Distillery in Bardstown from Kentucky-grown grain. It is pot distilled from rye, corn and malt, and aged for seven to eight years in small batches of one to three barrels. It is bottled at cask strength, 112 to 118 proof (56 to 59%), with a barrel entry proof of 110 and the distillery's own toast and char profile. The distillery spent over seven years working with local farmers to secure Kentucky-grown rye for this release. It is described as herbal, floral, sweet and spicy, with baked cinnamon pears, fruity gum and a rich, silky texture.
