Proof & Wood Good Day 21 Year Old Canadian Whisky (70cl, 52%)

This is a 21 year old Canadian whisky from Proof & Wood Ventures, bottled at 52% ABV in a 70cl bottle. It is a blend drawn from 8 barrels of corn, rye and malt whiskies distilled in 2000. After ageing, the blend was finished for 3 weeks in Kentucky barrels that had previously held American rye whisky. It was distilled in Canada, then finished and bottled in Bardstown, Kentucky. The mash bill is 97% corn, 2.7% rye and 0.3% malted barley. The nose is described as green spice with hints of honey and vanilla. The palate is rich, with caramel, citrus and dried fruit, and the finish is long, rich and smooth.
