Proper No. Twelve is a triple-distilled Irish blend of grain and single malt whiskey, matured in ex-bourbon barrels and bottled at 40% in a large 1.75 litre bottle. It is produced at the Old Bushmills Distillery in County Antrim.
The blend was developed with David Elder, a former Bushmills distillery manager, and was chosen from nearly 100 trial blends.
The nose is vanilla pod, floral barley and honeysuckle, with sandalwood and toasted wood beneath. The palate begins with orchard fruit and honey, moves to caramel, then a kick of white pepper and a faint lime-like citrus note. The finish is medium, with drying oak, caramel and toasted grain.
