Prunier B&S Fins Bois Folle Blanche 2018 (43%)

This is a Fins Bois cognac from Prunier, made entirely from Folle Blanche, the historic grape variety that has become rare in the appellation. It was distilled in 2018, aged in oak casks in the cellars at Gimeux and bottled at 43% vol. in an edition of around 780 bottles. The name looks back to B&S, short for Brandy & Soda, an idea from 1938 when Jean Burnez imagined a cognac made to be mixed with soda water. It suits cocktails such as the Sazerac, and it can also be sipped neat, lightly chilled or lengthened with a splash of soda. The colour is a bright white gold. The nose offers peach, white-fleshed fruit, fresh almond and white flowers, followed by floral honey and delicate wood on a balanced palate. The finish is long and clean.
