- French oak second maturation
An American rye whiskey from Pursuit Spirits, made as a blended straight rye and then given a second oak maturation with French oak influence. It is bottled at 54% ABV (108 proof) in a 700ml bottle.
The second maturation adds toasted oak and darker sweetness, while the peppery character of the rye stays in front. The whiskey is a rich amber colour.
The nose brings baked cherry, cranberry, citrus peel and warming baking spice. On the palate are brown sugar crumble, tart cherry, berry jam and layered oak. The finish has cherry pipe tobacco, charred oak, lingering rye spice and a touch of pepper.
