Cavehill is a Kentucky straight bourbon from Rabbit Hole Distillery, made in Louisville and aged for three years in new charred American oak barrels. This is a 20cl bottle at 47.5% ABV.
Its four-grain mash bill combines corn, wheat, rye and malted barley.
The nose is clean and sweet, with caramel, vanilla and toasted oak. On the palate, brown sugar richness comes with char, pepper spice and a touch of dried fruit. The finish is long and dry, with warm caramel notes lingering.
