This Founder's Collection release from Rabbit Hole is an 8 year old Kentucky straight rye whiskey, bottled at cask strength. It is a limited edition that celebrates the boxing heritage of Louisville. The mash bill is 95% rye with malted barley added, and the whiskey matured in toasted and charred new American oak. Each bottle is individually numbered.
The nose brings mint, cinnamon, anise and brown sugar, with licorice and a floral note. The palate is creamy and rich, with cinnamon, ginger, tobacco and blood orange. The finish is long, with intense allspice, herbs, tobacco and oak.
