Rademon Estate Shortcross 2017 Pioneer Collection (55.1%)

This is a single pot still Irish whiskey from Rademon Estate's Shortcross distillery, bottled at 55.1% vol as part of the Pioneer Collection. The series is made up of spirits produced climate-neutrally at their distilleries of origin. Shortcross was built on the Rademon Estate by David and Fiona Boyd-Armstrong, and the distillery draws all its energy from the estate's own solar and hydro power. The nose is richly fruity, with dried pineapple, mango, grapefruit and lemon oil. The palate balances wood and fruity spirit, with oaky vanilla and a honeyed sweetness, and cloves and cinnamon buns run through the finish.
