Ramo de Rosas Mezcal Espadín Joven

Ramo de Rosas Espadín Joven is a mezcal made at Santiago Matatlán in Oaxaca. It uses Espadín agave of around eight years old, harvested fully ripe. The agave hearts are cooked slowly over several days at low temperature, fermented in wooden vats and distilled twice in copper stills. This unhurried process keeps the smoke restrained and lets the agave show through. The nose is herbal, with citrus, mandarin and delicate floral touches. The palate is round and balanced, with pepper, fresh berries and ripe agave, and the finish is clean, fresh and lightly spiced.
