Rare Hare 7 Year Old Blended Bourbon Finished with French Oak Staves (75cl, 50%)

Rare Hare 7 Year Old is a blended bourbon in a 750ml bottle, bottled at 50% ABV. It starts with Kentucky straight bourbon aged for at least seven years in charred new American oak barrels. The finish comes from toasted French oak staves immersed in the whiskey, a technique adapted from the boisé tradition of Cognac. The staves are used instead of a second cask. The nose is light French oak with soft vanilla and rich toffee. On the palate, earthy sarsaparilla and sandalwood lead into pink peppercorn spice, and the finish is crisp and clean, with peppercorn warmth fading into toasty oak.
