Rare Hare 7 Year Old is a blended bourbon built on a Kentucky straight bourbon aged for at least seven years in charred new American oak barrels. It is then finished with toasted French oak staves.
The surface contact and toast level of the staves are adjusted to bring out nuanced flavours without heavy tannins.
The nose has light French oak with vanilla and toffee. On the palate, American oak brings earthy sarsaparilla and sandalwood, leading to the spice of pink peppercorn. The finish is crisp and clean, with lingering peppercorn warmth fading to smooth, toasty oak.
