Rare Hare 7 Years Old is a blended bourbon built on a Kentucky-sourced straight bourbon, bottled at 50% ABV.
The bourbon spends seven years in new American charred oak barrels. It is then finished with toasted French-oak staves, a technique adapted from the Cognac region's boisé approach.
The nose opens with caramel and vanilla bean, followed by toasted oak, melted sugar and a light biscuit crust. The palate is medium to full-bodied, with sweet corn and brown sugar leading to sandalwood, cedar, pink peppercorn and sarsaparilla. The finish is crisp and lingering, with toasted oak, vanilla custard and fine pepper.
