Rare Stash Bourbon #3 is a Kentucky straight bourbon made in collaboration with Dustin Poirier. It blends a 9 year old and a 5 year old bourbon, drawn from 25 barrels and aged in Char #3 oak barrels. Both use a 78/13/9 mash bill, and the whiskey is bottled at 96 proof (48%).
The nose is typically described as vanilla, oak, honey and maple. On the palate come caramel and oak, with butterscotch, citrus, maple and cinnamon. The finish lingers with honey and coriander, plus brown sugar and spice.
