Redbreast Pedro Ximénez is a triple-distilled single pot still Irish whiskey, and a permanent member of the Iberian Series. It is bottled at 46% and is non-chill-filtered. The whiskey is first matured in bourbon and oloroso sherry casks, then re-racked into Pedro Ximénez hogsheads from the south of Spain, which give a sweet finish. The nose has fruit, spices and toasted nuts alongside the gentle sweetness of Pedro Ximénez seasoned casks. The palate is zesty and syrupy, balancing fruit, spice and toasted notes, and the finish is rich and long, with sweet flavours that linger.
