Pipe Dream Cask Strength is the strongest expression of Redwood Empire's flagship bourbon, from a Northern California brand. It is bottled uncut and unfiltered at around 58% ABV, so it is not diluted after maturation.
The bourbon is a blend of whiskeys aged roughly 4 to 14 years, made from a four-grain mash bill of 73% corn, 18% rye, 5% malted barley and 4% wheat.
The nose offers toffee, cherry, maple, soft leather and vanilla. The palate is full and intense, with cherry cola, honey, butterscotch, roasted pecans and baking spice. The finish is long and warming, with caramel, oak char, black pepper and dark fruit.
