Resilient Bottled in Bond Bourbon (75cl, 50%)

Resilient Bottled in Bond Bourbon is a 4-year-old straight bourbon distilled in Indiana and bottled in Stanford, Kentucky. It is bottled at 100 proof (50%) in a 750ml bottle. The mashbill is high in rye, with 60% corn, 36% rye and 4% malted barley. The barrels are aged in new charred American oak and batched in small groups of roughly four barrels at a time. The nose is buttery toffee, poached pear and vanilla syrup, with caramel wafer, candied cinnamon and clove. On the palate, ripe stone fruit and baked apple lead into cinnamon bark and black pepper, over toasted oak. The finish is medium-long, with caramel, baking spice and dry oak.
