Grappa Ambrata is an aged grappa from the Romano Levi distillery in Piedmont, made from the pomace of Nebbiolo, Dolcetto and Barbera grown around Neive, Barbaresco, Trezzo, Treiso and Alba.
The pomace is worked while still wet with must, mixed and pressed at once for greater concentration. It is distilled in a direct-fire copper pot still, then aged for 5 years in 700-litre barrels of different woods.
The colour is a deep, bright amber. The nose opens with herbal notes, followed by spice and fine woods. The palate is full, dry and elegant, and the long finish carries tobacco, wood and spice.
