Ruinart Dom Ruinart Blanc de Blancs 2013 Extra Brut

Dom Ruinart is the Extra Brut Blanc de Blancs cuvée of the house of Ruinart, created in memory of Dom Thierry Ruinart, its founder. This is the 2013 vintage. The grapes come from the best vineyard plots in Champagne and are picked by hand. Fermentation takes place in temperature-controlled stainless steel, followed by malolactic fermentation, and the wine then rests on its yeasts for at least nine years. Riddling and disgorgement are done by hand. The nose combines toasty notes, almond, ripe wheat and pastry with grapefruit, lemon zest, bergamot, passion fruit and mango, then iris, hyacinth, chalk and a little smoke. The palate is firm and chiselled, with crystalline freshness.
