Savage & Cooke Burning Chair is a four-year-old bourbon from Dave Phinney, bottled at 88 proof (44%). Barrels are chosen by hand from Kentucky, Indiana and Tennessee, and the youngest in the blend is four years old. The mash bill is 75% corn, 21% rye and 4% malted barley.
The bourbon matures in new charred American oak, then is finished in wine barrels from Phinney's Napa Valley Cabernet projects. It is reduced with water from his property in Alexander Valley, California.
Brown sugar, caramel, butterscotch and toasty oak lead the nose. The palate is smooth and lush, with vanilla bean, baking spices, maple and baked apple, followed by a long finish.
