Savage & Cooke Burning Chair Cask Finish Bourbon (44%)

Burning Chair is the first release of a four year old bourbon from Savage & Cooke, with each barrel hand-selected by Dave Phinney. The blend draws on barrels from Kentucky, Indiana and Tennessee, and the youngest is four years old. The bourbon spent a minimum of four years in new charred American oak, then was finished in wine barrels from Dave's Napa Valley Cabernet projects. It is reduced to 88 proof (44%) with water from his property in Alexander Valley, California. The nose has brown sugar, caramel, butterscotch and toasty oak. The palate is smooth and lush with vanilla bean, baking spices, maple and baked apples, and the finish is long.
