A gin made with Capsella rubella, known as shepherd's purse, alongside local ingredients from south-west Ireland, west of Cork. The herbs are hand-harvested, and the gin is bottled at 40%.
It has a distinctive flavour of the flora and flowers of the hills around West Cork, with notes of dried fruit, lavender, clove, cinnamon and a hint of citrus, plus juniper and angelica.
Try it with Fever-Tree Indian tonic.
