Shimizu No Mai Pure Night Junmai Daiginjo Sake (72cl, 15.5%)

Shimizu No Mai Pure Night is a Junmai Daiginjo sake from Akita in Japan, in a 72cl bottle at 15.5% vol. It is brewed in small batches with Yamada Nishiki rice milled down to 35%, proprietary yeast and mountain spring water. The bottle is black and minimalist, intended to recall a moonlit night in Akita. The nose is white pear, lychee and melon with soft floral notes. The palate is silky, with stone fruit, rice sweetness, subtle minerality and a gentle umami core. The finish is clean and persistent, with melon, jasmine and polished rice.
