Shinobu The Koshi-No is a blended whisky finished in Mizunara oak, bottled at 43% in a 70cl bottle. Shinobu is a Japanese brand founded in 2017 by Ken Usami, who also founded Niigata Beer Co. Ltd. With the distillery still under construction, Usami blends Scotch malt and grain whiskies, matures them in bourbon and sherry casks, then finishes them in Mizunara oak.
Incense, gentle vanilla and herbal spice stand out. The nose is brown sugar, cream and maple syrup with floral touches, while the palate brings vanilla, baked apples and nectarines with a peppery edge. The finish is short to medium, sweet and tropical, with raisins.
