A Junmai Daiginjo sake from Takara's Shirakabegura line, sold under the Sho Chiku Bai name in a 640ml bottle at 16% vol. The rice is polished to 45%, and no distilled alcohol is added, so the sake rests on rice, water, yeast and koji.
On the nose it shows pear, melon, banana, soft floral notes and a light mineral edge. The palate is smooth and refined, with vanilla, melon, banana, gentle sweetness and white mushroom over clean rice umami. The finish is crisp, with lingering fruit, light earthiness and soft sweetness.
It is best served chilled, in a wine glass or a traditional sake cup.
